Creamy Potato and Broccoli Soup

This Creamy Potato & Broccoli Soup is a hearty, comforting meal made with fresh vegetables and simple pantry spices. Designed as a freezer bag meal, it's perfect for prepping ahead — just chop, bag, and freeze. When you're ready to cook, add broth, cream, cheese, and butter for a rich and velvety finish. It serves 8 and can be made in the slow cooker or on the stovetop, making it a convenient and delicious option for busy weeknights or cozy weekends.

Ingredients
  

  • 6 Cups Potatoes, peeled and diced About4–5 medium russets or Yukon golds. can substitute frozen hash brown
  • 4 cups chopped fresh broccoli florets
  • 1 Large Vidalia onion finely diced.
  • 4 C Vegetable Broth or Chicken Broth add day of cooking
  • 2 Medium Carrots, Peeled and Diced
  • 3 Cloves Garlic Minced
  • 2 Celery Ribs
  • ¼ tsp Crushed Red Pepper flakes
  • optional- cooked bacon crumbles
  • ½ tsp Black Pepper
  • 1 tsp Salt
  • ½ tsp Thyme
  • 1 C Heavy Cream add day of cooking
  • 1 ½ C Shredded Sharp Cheddar Cheese add day of cooking
  • 2 Tbsp Butter add day of cooking

Instructions
 

Prepare:

  • Label a gallon-sized freezer bag with: "Creamy Potato & Broccoli Soup"
    Combine in the freezer bag:
    Potatoes, broccoli, onion, garlic, carrots, celery salt, pepper, thyme, and red pepper flakes
    Add :
    broth, cream, cheese, and butter day of cooking
    Remove excess air: Seal tightly, and lay flat to freeze

Cooking Instructions:

    CROCK POT/ SLOW COOKER

    • Slow Cooker (preferred):
      Pour contents into slow cooker. Add 4 cups broth.
      Cook on LOW 6–7 hours or HIGH 3–4 hours, until potatoes are soft. Use an immersion blender (or transfer half to a blender) to puree partially or fully — depending on your texture preference.
      Stir in 1 cup heavy cream, 2 tbsp butter, and 1½ cups cheddar cheese.
      Cook an additional 15–20 minutes, stirring occasionally until melted and creamy.

    Serving instructions:

    • Top with extra cheese, crumbled bacon and fresh chives.
      Serve with crusty bread or garlic bread.
      For this recipe we thicken the soup with cornstarch if needed.
    • Out of all the recipes I make I would have to say this is one of the most requested from the kids. I have been making this for years and I absolutely love how easy it is to make and prepare. This can easily be made in the oven also but crockpots just make everything so much easier. This has become one of B’s favorite meals that I make too, she loves how herby is it and usually ends up adding a fresh squeeze of lemon once its cooks.
